Hello friends!
Guess what? My biochem exam is OVER! Commence rejoicing.
Elle and I wore running clothes to the exam (which was at 8 a.m. on Saturday) and went out immediately afterwards for a celebratory 4 mile run around campus. Hooray! The exam was tough but I think it went okay — we’ll see. It was LONG — 13 pages of intense short answer and some long answer questions. 2.5 hours straight of writing!
Matt was nice enough to make dinner on Friday night since I was busy finishing up studying. Isn’t this taco salad pretty?
He says he learned the importance of food presentation from his dad. 🙂 Meals really do taste better when they look pretty. This was a combination of rice, chicken, steak, tomato, avocado, onion, peppers, and all sorts of spices, on top of fresh spinach and some broken up taco shells. YUM! Plus salsa in the background of that photo above — still working our way through the salsa I made and canned myself at my dietetic internship last summer!
We also had a delicious dinner on Thursday night — Matt was in charge of chicken and I was in charge of veggies! Team work. 🙂
Matt whipped up a variation of my Corn Flake Encrusted Chicken Tenders (SO GOOD!!!) — he added hot sauce to the batter and used Italian bread crumbs in addition to the corn flakes and it really kicked up the flavor.
As for the veggies, I roasted up some brussels sprouts (here’s How to Make Brussels Sprouts Delicious) and sweet potatoes. So simple and so good!
I spent yesterday after the biochem exam playing with the grad school girls in celebration of almost being done with finals — recap to come. As for now, I have a fun Sunday ahead! Matt and I went for a nice long walk this morning and are now whipping up some brunch. This afternoon I’m headed to my friend Lindsey’s baby shower and then to my classmate Maria’s house for a grad school class dinner get together! Taking the day off from studying — our last final exam is on Tuesday, but for now I need a break. 🙂
