Hi guys! I’m so glad many of you have already tried my Apple and White Cheddar Omelet recipe! I ended up having an omelet for dinner on Friday night… breakfast for dinner is always a win.
In other news, I got in a great run yesterday!
I’m still on the once a week (or maybe twice, if I take the dog for a short mid-week jog) running train and it feels about right. It makes me really look forward to my weekend run dates with friends!
I met up with my college buddies Kathleen and Sarah for 5 chatty miles. It was cold and mysterious looking outside, but nice for running!
We finished and wanted to keep chatting so we took a stroll around Roosevelt Island to keep the party going. 🙂 It’s always such a treat to catch up with them!
As for Saturday’s fitness, Matt and I got in back-to-back sessions with Paul from Capital Energy Training! Matt focuses on strength (and a little mobility) with him, while our focus is fully on mobility and stretching. Very necessary in this postpartum phase!
In other news, I’m back on the oatmeal train – this was a stovetop variation of my microwave banana oatmeal. Making it on the stove felt so fancy. 😉 Riese enjoyed it too – I made it with banana, oats, whole milk, chia seeds, and almond butter stirred in. Yum!
I’ll be back tomorrow to share some of the easy eats we’ve had lately, but for now, I’m off to tackle my to do list and hop on some AnneTheRD client calls! This week is going to be pretty packed because we are taking a little family vacation next week so I need to work ahead quite a bit – better get to it!
