Potato & Sausage Egg Burritos

Step 1

Chop potatoes (or sweet potatoes) & other vegetables. Roast on a sheet pan until tender.

Step 2

Cook sausage in a skillet, breaking into small pieces. Set sausage aside & drain skillet.

Step 3

Whisk eggs. Pour into skillet & cook. Stir in cheese until melted.

Step 3

Assemble burritos: fill center of a tortilla with eggs, veggies & sausage. Sprinkle with cheese.

Step 4

If eating right away, add salsa & avocado. Wrap & enjoy.

Step 5

To freeze: wrap burritos in paper towels & foil or plastic wrap. (Wait to add salsa & avocado.) Remove foil & reheat in microwave.
