Ingredients

Step 1

Saute onion, carrot, celery, and garlic in the Instant Pot with olive oil. Add seasonings & tomato paste.

Step 2

Add zucchini, bell pepper, cabbage, diced tomatoes, chickpeas & vegetable broth. Cook on 'soup' setting (high pressure) for 6 mins.

Step 3

Release steam. Remove lid. Stir frozen green beans & kale into hot soup. Let sit 2-3 minutes until heated through.

Step 4

Stir well. Season to taste with salt & pepper.

Step 5

Serve topped with fresh parsley, with a side of crusty bread or grilled cheese.
