Ingredients

Step 1

Scoop out gills from mushroom caps. Remove stems.

Step 2

Roast mushroom caps on a baking sheet until tender.

Meanwhile, cook artichokes, sun-dried tomatoes & white beans on a skillet until heated through.

Step 4

Add spinach, balsamic vinegar & thyme. Crumble in feta.

Step 5

Fill baked mushroom caps with mixture. Sprinkle parmesan on top & broil until golden.
