Ingredients You'll Need:
• Salmon filets
• Zucchini
• Squash
• Tomatoes
• Olive oil
• Jar of pesto (or make homemade)
• Quinoa (or grain of choice)

If making pesto: combine basil, pine nuts, parmesan & garlic in a food processor. Process until finely chopped.

If making pesto: continue processing while streaming in olive oil until smooth. Add salt & pepper.

Add sliced zucchini, squash & tomatoes on the bottom of a baking dish. Place salmon filets on top.

Spread pesto sauce over salmon. Cover with foil & bake until salmon is cooked through & flaky.
