1) Turkey sandwiches… but only cut into triangles. Triangle shapes totally make sandwiches taste better.
You guys know from seeing a lot of my packed lunches (you can find a bunch on my recipe page) that I hardly ever pack sandwiches. I usually just find rice/bean/veggie mixes, wraps, salads, or pita bread with hummus much more satisfying, but lately I’ve been feeling the classic turkey sandwiches for a change. Pictured above is turkey, tomato, avocado, spinach, cracked pepper, and mustard on honey whole wheat bread. Loving this bread, too — we got it from Kath and Matt at Great Harvest Charlottesville over our engagement weekend and I’ve had it in the freezer ever since. I can never eat bread fast enough to keep it fresh, so the freezer works perfectly! Just pre-slice it before you freeze it or you’ll have trouble getting it apart. 🙂 Then just toast however much you want and it’s perfectly fresh!

2) Brunch at home instead of at a restaurant. We were going to go out for brunch on Sunday, but Matt was in the mood to make something at home instead.
How pretty is that brunch? I hope Matt’s dad is reading this because he’d be proud. Matt has been all over the food presentation skills lately! I loved the orange juice in a wine glass, too. That’s Matt’s plate pictured above — mine was the same but with a smaller omelette (they were stuffed with spinach, tomato, mushrooms, green pepper, fresh basil, and feta cheese — and topped with avocado and cracked pepper!) and toast with strawberry jam instead of cheese. Delicious! My compliments to the chef. 😉

3) Yogurt/cottage cheese/cereal messes for snacks or breakfast.
Pictured above is my breakfast this morning — sadly we are out of fresh fruit since I’m leaving for DC tomorrow morning, but it was still delish. A container of Chobani pineapple Greek yogurt, a couple spoonfuls of cottage cheese, and a large handful each of cereal (for crunch) and raw oats (for chew). I <3 this cereal. So crunchy and nice and nutty tasting — great ingredient profile, too. Plus, they sell it in an ENORMOUS bag which is good for both the environment and my wallet. 🙂

4) The fact that I am DONE with my third semester of grad school now!!!!! I had my last final exam this morning. Hooray for freedom! I have all sorts of errands to run today and packing to do since I’m heading out of town tomorrow morning, but I think I’m going to fit in a sunshine-y afternoon run at some point later on. It always feels so indulgent to go running in the middle of the day in bright sunshine when you’re used to having to get up early and run in the cold/dark to fit in a workout! 🙂
