Hey friends! We had a bunch of sweet potato/yellow pepper hash leftover from Mother’s day brunch at our place, so I threw together an easy Mexican themed sweet potato and black bean power bowl for lunch yesterday.
Step 1: wilt a huge handful of baby spinach in the microwave (heat about 45 seconds).
Step 2: toss in sweet potatoes and canned black beans (drained/rinsed).
Step 3: add guac, because guac is awesome. Plus salsa and a little hot sauce (I used my fave: Cholula chili garlic hot sauce).
Easy and delicious! There were enough leftovers on hand to make another bowl, so I threw it all in a container to bring downtown to my coshared office today. Looking forward to eating it again shortly!
