Hi guys! Popping in to share some summery dinners that we enjoyed last week. I’m loving being able to eat on the deck most weeknights now that it’s light out so late!
We’ve always loved Blue Apron, which sends you all the ingredients you need to make delicious, chef-designed recipes at home – but we love it even more lately because our time is so limited these days! We get a Blue Apron delivery every single week (on our own dime, not just for these occasional sponsored reviews) – and it’s the best. Sure, we have a lot of easy throw together meal ideas to choose from that we could make, and we do use those for other nights of the week, but having 3 fun/new dinners already planned and ready to cook each week is great. Makes dinnertime much less overwhelming! Plus, Blue Apron’s meals are always more interesting/creative than our usual go-to throw together meals. Fun to try different things, especially since they add new dishes to their menu each week!
Like, for example, these Roasted Chicken Drumsticks & Cauliflower with Orzo, Kale, Feta Cheese, and Olives. So good and easy.
While the chicken and cauliflower roasted, you made the orzo and then put a huge bunch of chopped kale into the same pot to wilt down. Yum! (And yay for easier clean up since you’re using the same pot and just the one pan.)
We subscribe to the 2 person plan with Blue Apron (they also have a family plan option, which offers 2 to 4 recipes per week that each serve 4), and each week you choose your favorite 2 to 3 meals from 8 choices. We always go with 3 meals because it’s hard enough to choose as is – everything always sounds delicious! But having the option to just do 2 is nice if you know you won’t be home that much, but don’t totally want to skip the week (which is easy to do, though, if you need to).
Now that it’s summer Blue Apron has started including grill-friendly instructions (as well as an alternative using the stovetop/oven) in some of their meals, too, which is fun. I really love this because a) grilling out makes weeknights feel more like weekends, and b) the ventilation in our kitchen isn’t great so this way our house doesn’t smell like food forever.
These Seared Pork Chops & Pickled Mustard Seeds with Potatoes & Slaw was another meal we enjoyed last week. We were in the mood for roasted potatoes vs. potato salad, but otherwise followed the recipe! Delish.
The other Blue Apron meal we had last week was a delicious Garlic & Soy-Glazed Shrimp with Charred Broccoli & Hot Green Pepper Sauce. This was really fast (love shrimp – such a quick cooking protein!), and the garlicky sauce was REALLY good. We both loved it!
The shrimp dish was part of a partnership Blue Apron is doing with Chrissy Teigen, a New York Times best-selling cookbook author. The partnership, which began on June 4 and will continue through July 9, is bringing six of Chrissy’s original recipes (one per week), to Blue Apron menus nationwide. Most of the recipes are from her first cookbook, Cravings, but in the final week of the partnership Blue Apron members will get a sneak preview of a recipe from Cravings 2, her second cookbook that launches this September. It’s Pork Banh Mi Sandwiches with Pickled Cucumbers & Carrots, and I can’t wait to try it the week of July 9!
