I followed the recipe exactly except that I used fresh tomatoes instead of sundried. It was just as delicious. I think next time I will also try reducing the balsamic vinegar that you drizzle on at the end, just to mix things up!
On the side, we had my Mexican-Style Sweet Potato Fries 🙂 Also a huge hit!
With lots of (organic) ketchup, of course.

Speaking of my recipes, I have some awesome news — reader and fellow blogger MacKenzie has offered to act as a “fANNEtastic intern” of sorts and will be calculating the nutritional stats for ALL of my recipes! You guys have been asking for this daily so I’m really excited to finally be able to give you what you want. Any recommendations for sites to use to calculate nutritional stats (especially ones that have obscure ingredients like chia seeds and spelt flour)? Or any format preferences (e.g. the little nutrition labels vs. just listing the stats)? Let me know your thoughts, all input is helpful 🙂
