Good afternoon, my friends! I can’t believe it but this is my last week of teaching this semester at GW! Time flies when you’re busy, huh?
On the food front, last night’s menu was a simple stir fry. So easy and healthy, too.
Stir fry is such a great way to use up leftover veggies! I had some bok choy on hand to use up so that was the inspiration for this easy dinner.
For the protein, I used this buffalo skirt steak I picked up at the farmer’s market over the weekend. I’ve been trying to make more of an effort to buy local meat lately and the buffalo intrigued me. I like ground buffalo, so I figured this would be good, too.
I started by sautéing some garlic in a pan, then added the sliced skirt steak, followed by the fresh bok choy and this frozen broccoli stir fry mix from Birds Eye.
As for sauce, I used my favorite easy Asian stir fry sauce recipe. I probably should have marinated the meat in it first to make it more tender (the meat came out kind of tough), but I didn’t plan ahead. Oh well – next time!
As for rice, I used this 90 second Seeds of Change plain brown rice. Easy and awesome.
Ready to eat in 10 minutes flat and packed with veggies. Now that’s my kind of dinner!
On the fitness front, I tried out a new-to-me class at Stroga on Monday night with my friends Karen and Kathleen – their 7 p.m. strength training class.
The PR team at Stroga generously gifted me with a package of free classes at their studio awhile ago and I discovered that I could also use the free classes towards signing up friends. Cool! Kathleen, Karen, and I decided to mix it up from yoga and try something new. I’d never been to their strength training classes before and the space was really cool – it’s on the top floor in a large open area that has a sort of playground feel – all sorts of cool equipment! (The ballroom where the yoga classes are is on the 2nd floor.)
I wish I’d gotten some photos of the action during class but we were too busy sweating! I was really impressed with the class – super creative, great instructor (Jeffrey), and a great workout, too. We did a big mix of things so we never got bored, which I love. TRX, weights, kettlebells, body weight moves, use of the pull up bar, and more!
Two BIG thumbs up. I wish I lived closer to Stroga because I’d absolutely come back to this class more often. It was great – one of the best strength-focused boot camp workouts I’ve found in the area!
