Continuing with my quest to make all sorts of fresh, healthy meals this week after basically and entire month of eating out over the holidays/my European trip, I made a delish dinner last night!

My inspiration was two of my favorite recipes on my blog — both from one of my best friends, Jessica — the first is Almond Encrusted Tilapia!
I didn’t follow the recipe because I was missing a bunch of stuff, so I basically just ended up rolling the tilapia in some spelt flour mixed with a little salt and pepper, and tossing it in a pan with a little bit of olive oil. Voila!
Super simple and tasty, too.
Next up — a hybrid of my Stuffed Portobello Mushrooms! Veggie explosion:
I more or less followed the recipe, except that I used fresh tomatoes instead of sundried and I didn’t have any artichoke hearts, so I used zucchini instead. I know, I’m so wild and crazy.
Very satisfying. Actually, it was so filling I only made it through just about half and saved the rest for later! The tilapia was enormous and I went a bit crazy with the veggies (I used a whole bag of spinach!). Perfect because now I have leftovers 🙂
For dessert, I enjoyed a couple pieces of this awesome licorice I was sent to review for the blog!
Normally I wouldn’t accept an offer to review candy, but I LOVE black licorice (and black jelly beans — yes, I’m weird) and this brand is awesome because it’s licorice minus the weird fake processed ingredients (no artificial flavors or colors, no preservatives, no trans fat, no HFCS). Sweet!
My dad also absolutely loves black licorice, so Natural Vines was nice enough to send a bag of black licorice for him to try, too. I brought it over to Germany for our family vacation and he gave them two big thumbs up 🙂

In other news… I finally decided on a business card! The front of the business card will be the one with the purple line through it I posted a picture of in this post. And here’s the back I decided on:
Thoughts? A lot of you didn’t like “awesomeness,” so I went with fun instead — shorter, less silly sounding, but still conveys the same idea (i.e. that my blog is supposed to be useful AND entertaining — and that it’s about my life and not just food!). I hope you guys like it as much as I do! And thanks again to Bailey, graphic designer extraordinaire —whether you need general graphic design work, a new blog banner or logo, business cards, etc., I’d highly recommend her.

Some fun things I’ve come across recently:
- This awesome ad campaign that markets baby carrots like junk food is marketed. Genius, right?! They should do this with all healthy food!
- The “Pound for Pound Challenge” — for every pound you pledge to lose, they will donate 11¢ to Feeding America – enough to secure one pound of groceries on behalf of local food banks. (You can also pledge to maintain your weight!)
- This blog (written by a friend of my friend Ben) — the author is running 40 miles on his 40th birthday to promote awareness of severe food allergies like the ones his son suffers from. Very admirable! (To read about the original inspiration for the project, check out this post.)
