To today, one week later, it’s supposed to be almost 70 by afternoon. Wow. Hello global warming…
We got some rain yesterday which was nice because it got rid of all the lingering snow and ice! Good news as I have plans to meet a friend for a run tomorrow and the trails should be nice and clear for us now.
I mentioned last week in my lifestyle post that Matt and I planned out a month worth each of date nights instead of giving each other gifts this Christmas, and this week our date night that Matt planned was ice skating! So fun. And nice to go on a night that was about 50 degrees instead of super super cold.
It was awesome for about 20 minutes because there were only a handful of people there, and then around 6:45 a massive group of kids arrived for a birthday party and it was total chaos. Womp, womp. We stayed another 15 minutes and then got out of there before we got taken out by one of the kids in wipeout mode!
We got sushi afterwards nearby. The food was so-so but the company was excellent. 🙂 Solid date! It has been fun to mix it up and do an activity + dinner vs. just dinner.
In terms of other meals lately, we’ve had a lot of Mexican food because it’s always a win for us and the kids.
Here are some tacos Matt made for us one night. We had some steak to use up so they had steak, sautéed peppers and onions, guacamole, and black beans. Yum!
The kids didn’t want the tacos, so they just had the steak on its own, raw sliced bell pepper, and crackers, plus Riese enjoyed some black beans (she likes beans, Wes does not).
Riese did have some kale chips, though! I made some as a side dish to get in some green and because we had some kale on hand that we needed to use up. So good – crunchy and salty. Here is my favorite way to make them: Baked Kale Chips (includes 4 flavor variations).
Speaking of what the kids will actually eat (and not), they are still LOVING my flour free banana egg pancakes (<- recipe). We make them 3 or 4 times a week – definitely one of our standard breakfast go-to’s.
The other thing I’ve been eating a lot of lately is grain salad bowls. Regular salads just don’t keep me full for long, but add a grain to it and boom! A satisfying salad.
This one had some lettuce and micro-greens, chicken, random veggies, feta, brown rice, and a lime vinaigrette.
I hope you have a great weekend! If you’re looking for something to read, I recently finished “Talking at Night” (Amazon affiliate link) by Claire Daverley and it was gorgeous – such beautiful writing. I loved it, though a warning it is a little heavy/not super light.
Now I’m reading a light and cute romantic comedy called “Snowed In” (also Amazon affiliate link) by Catherine Walsh and really enjoying it. It includes the fake dating trope which is always fun. Recommend!
