Hi friends! Thank you for your great Girls on the Run advice on yesterday’s post! (If you missed it – I’m volunteering with them as a coach this fall for the first time.) We ended up having a fun practice yesterday because the rain held off so we were able to get outside to run. Yay! The girls were pumped.
It’s a busy day for me today because I’m prepping to leave tomorrow afternoon for FNCE, the big annual Registered Dietitian conference, and I’ll be gone until Tuesday afternoon! This year’s conference is in Nashville, and I’m actually going to be speaking this year, which is both exciting and scary. 🙂 I’m talking on Tuesday morning at 8 a.m. (oof) with fellow dietitians Regan Jones and Danielle Omar on using/understanding analytics and SEO (search engine optimization) to grow your blog or business website, and thus increase revenue/nutrition clients. If you’ll be at FNCE and will still be there on Tuesday, I’d love to have you join us!
Since it’s rainy, comfort foods have been sounding appealing. Last night, Matt and I enjoyed a delicious Blue Apron turkey and chickpea chili.
I really liked the addition of labneh cheese (rich and creamy – made from strained yogurt, so it was similar to Greek yogurt) on top, and the cilantro/lemon juice/olive oil/garlic mixture was awesome, too. Definitely going to add those on top the next time I make chili at home! We have about one serving left of the chili so I’m looking forward to enjoying it tomorrow for lunch before flying to Nashville. 🙂
Another good Blue Apron meal that we had recently (last week – we get it every week on our own dime outside of my occasional sponsored reviews) was a Southern-Style Chicken Cacciatore with Creamy Grits. We had never made grits at home before – turns out it’s just as easy as making rice!
Ready to eat! This was really unique. Loved the southern spin on the Italian favorite!
And now, time to hunker down and finish up work. Tonight’s mission: get organized for my trip!
