Since I found out I was going to be stuck in D.C. for four days longer than expected, I’ve had a test of wills going on with myself to see if I could manage not going to the grocery store again before leaving. It’s been pretty intense. Case in point:
This morning, I ran out of bananas.
I know. DISASTER!!! How can I eat breakfast without a banana?!?!?!?!?
Okay, get a grip Anne, it will be okay. Let’s think seriously about this.
Cereal? Wait, I’m out of cereal. And cereal is not much fun without a sliced banana.
Oatmeal!?! Definitely needs a banana.
Crap. Ummm… what else do people eat for breakfast?
Eggs? I only have egg whites in a carton. That’s boring.
Wait… Pancakes!! Yesssssss 🙂 Good thing I still had some blueberries and a tiny bit of milk hanging around!
Mmmmmmmmmm delish 🙂 I basically just threw what was left in my fridge into them. They came out very tasty! Hearty, but with a nice soft texture 🙂
PB & J Blueberry Pancakes
(makes one large or two small pancakes)
Ingredients:
- 1/3 C whole grain pancake mix
- 1/3 C skim milk (or non-dairy substitute)
- 2 T oats
- 1 T liquid egg whites
- 1 T unsweetened applesauce
- 1 tsp ground flaxseed (optional)
- 1/2 tsp vanilla extract
- 1/4 tsp pumpkin pie spice (or cinnamon… I’m all out!)
- blueberries
Told you it was random. 😉
Instructions:
Toss all the ingredients (except the blueberries) in a bowl and mix.
I used this pancake mix left over from the Blogger Secret Ingredient: Pancake Mix contest (which I actually won with my Secret Ingredient Falafel with Cucumber Yogurt Garlic Sauce recipe!)
Heat a nonstick pan (or use PAM) on medium heat and pour the batter into the pan. I just made one massive pancake 🙂
Once the batter is in the pan, sprinkle the blueberries on top. Heat a minute or two until you can flip it, then heat a minute or two on the other side.
Once it’s cooked, place on a plate and top with nut butter and jelly of choice 🙂 I used Nuttzo and this awesome Strawberry Rhubarb jam from Williams Sonoma.

I’m off to get my hair cut in a bit! I was supposed to get it cut down in Tampa today, but obviously I am not there! I made a new appointment for here in the area… it’s so much more expensive here, but I REALLY need it cut!
Afterwards, I’m meeting up with a friend for a drink downtown. We’re also going to check out the White House decorations and the official Christmas Tree. 🙂 Yay! Don’t worry, I’ll be sure to take some pics for my snow blog 😉
