Hi guys! Thank you for all the potato salad recipe links in the comments of Friday’s blog post (bookmark that post for potato salad recipe ideas in the future!) – so many good ones to choose from! We ended up deciding to do a sort of hybrid of recipes based on what we had on hand. We started by using this Finnish Summer Potato Salad recipe as a base, because I love vinegar-based dressing and thought that would be an interesting/unique potato salad presentation. We followed that recipe but ended up adding a couple spoonfuls (maybe 2 tablespoons?) of plain whole milk Greek yogurt to the sauce to add a little creaminess, and Matt added a clove of fresh minced garlic as well. We also used dill instead of chives, because dill is awesome and we have a lot on hand now!
It came out well – I would make it again for sure! Although now I want to try all the other recipes you guys shared – so many delicious sounding ones!
We brought the potato salad to our friends Lily and James’ house last night for a BBQ (although we ended up being inside since the weather wasn’t great) to celebrate mother’s day! Lily and James have a baby 8 weeks younger than Riese, and our friends Heather and Mike joined with their baby as well, who is 2 months younger than Riese. So fun and special to celebrate our first mother’s day together! It’s also always fun to get the babies together – they are quite intrigued by each other.
We had some delicious appetizers (pictured above) before tucking into the BBQ fare!

As for the earlier part of mother’s day, I started off with some yoga, which felt lovely:
And then Matt, Riese, and I had brunch with my mom and my grandmother! So nice to get to spend part of Mother’s Day with them – 4 generations, all together! Riese dressed up for the occasion. 🙂 (Also, the shirt I’m wearing is a nursing shirt and one of the cutest I’ve found – cheap, too, and comes in a billion colors. The necklace is a teething necklace for Riese to chew on – she loves it!)
My mom made my Smoked Salmon and Vegetable Egg Casserole (minus the zucchini), and we had pumpkin muffins and my Fruit Salad with Yogurt Honey Lime Dressing as well.
Plus bacon! Here’s my plate. My college friends may notice that the plates are Dickinson College-themed – fun! My mom went there too. 🙂
As for the rest of the weekend, we kept things low key and got some stuff done around the house, and I also had a fun mom’s night out on Saturday with two girlfriends, Lara and Gretchen, who also have little ones!
We met up at Trio Grill which lived up to its great reviews on Yelp. Such good food and a fun ambiance too! We took our time and ordered a lot of stuff to share. The #1 fave was probably the Tuna Tartare Nachos, but everything was delicious. Such a fun treat!
