Okay so I know I said today I’d do a fitness post… but my lunch was too good not to share, so I’ll have to leave you in suspense 🙂
I had dinner at my grandmother’s last night, and she sent me home with some leftover chicken. So for lunch today, I stuck with my “______ salad sandwich” theme of the week and decided to make a healthier and more awesome American classic: the Chicken Salad Sandwich!
Autumn Chicken Salad Sandwich
Ingredients:
- Leftover chicken, shredded or cut into small pieces
- 1 celery stalk, chopped
- 6-8 grapes, sliced
- Small handful walnuts, chopped
- Nonfat plain Greek or regular yogurt
- Dijon mustard
- Cracked pepper
- Fresh spinach
- Whole wheat pita
Instructions:
Start with the leftover chicken in a small bowl. Add chopped celery, grapes, and a small handful of walnuts.
You should now have this:
Next, add a spoonful of plain yogurt and a squirt of dijon mustard. As usual, add about 2 parts yogurt per 1 part mustard, to taste. Mix it all up, place on a whole wheat pita, cover with spinach, and enjoy!!

Mmmm so good! This would also be awesome with cranberries instead of grapes. And on hearty bread. Next time I randomly have chicken around, I’ll try that 🙂
I enjoyed my sandwich with one of my awesome Sweet Potato Banana Oat Muffins and my biology midterm flashcards.
I think it went well! There were only a few questions I was unsure of, so that was good 🙂
Speaking of Bio, we had a “go on your own” lab where we had to visit the Smithsonian Museum of Natural History and answer some questions about one of the exhibits. I went yesterday – it was fun to be downtown, and I took some pictures for you all 🙂
