I head home to DC on Saturday, but, since I’m going home so early and am in serious need of some money, I’m going to work all next week at my old office editing job. It will actually be fun, though — nice to mix it up from school/homework and I’m excited to see all my old coworkers and have a reason to dress up cute again! 🙂 After next week, though, it’s time for some real relaxation!
Anyway! Yesterday was spent surrounded by this:
Since we were tired of campus, four of my grad school friends and I met up at a cute cafe in Chapel Hill called Foster’s Market to study Biostats! It was actually kind of fun — studying with others is WAY better than studying by yourself. More productive, too! We spent from about 9 a.m. til 3 p.m. at Fosters working on practice problems (and occasionally chatting, heh). As a reward for all the studying, we treated ourselves to lunch there, too! (Usually we all pack our lunches — I mean, we are in the nutrition program and all, heh. Plus… grad school = we are poor.)
I’ve been to Fosters before but never had their lunch — it was delicious! I started with the Greek Grilled Cheese, which was a grilled pita stuffed with spinach, tomato, grilled onions, artichoke hearts, cucumbers, peppers, provolone cheese, and feta spread! Major yum (excuse the ghetto photos — I had my point and shoot and it hates being indoors)!
On the side, I had a small cup of their current special — Sweet Potato Black Bean Chili. Yum! Reminded me of my Sweet Potato Lentil Chili, except their sweet potato was pureed into the soup instead of chunky like in my recipe 🙂
(Sidenote — I also just saw that the Foster’s website has a whole recipe section — awesome!)
At 3 p.m., we called it quits on the studying. Two of the girls headed home, and me, Lauren, and Elle hit the trails for a celebratory run!
It was a great run — I felt sluggish at the beginning (it was COLD — can you tell from the photo? 🙂 ) but felt good for the second half. We ran just over 4 miles. Success!
Speaking of my friend and classmate Elle (in the middle, above — and the owner of “The Clubhouse” aka the cutest townhouse EVER) — she started a blog!!!! It’s called Nutritionella and it’s super cute. Please go give her some love and welcome her to the blogging community! 🙂 And while you’re at it, check out the awesome Whole Wheat Cranberry Orange Muffin recipe she just posted today — I was lucky enough to sample some last night and they are delish!
And now — time to RELAX! Plans for today include:
- Lunch/chilling (home)
- Blog-related call
- Getting my hair done! Yay
- Dinner with my whole grad school class
- Going out on the town!!!
Can’t wait 🙂 Have a great day, everyone!
