First — I am absolutely LOVING all the Dawson’s Creek fans coming out of the woodwork on my previous post. So jealous of those of you who have met the cast or been on set! Heh.

Anyway — I had such a fun day after my Food Science test yesterday! Since we knew we’d be getting out of class right after the test (at 4ish instead of 7ish!), a bunch of the girls and I planned a trip to get ice cream at Maple View Farm, a dairy farm about 15 minutes outside of Chapel Hill. How cute is this place?!
And, how hot is my friend Elle’s bright red Jeep?! Nothing better than a ride in a Jeep with the top off on a beautiful fall day with your girls!
The farm was SO beautiful. I could hardly believe it was only 15 minutes outside of town — it felt like we were in the middle of nowhere.
The ice cream was divine, too. So fresh 🙂 I got a cone with a scoop of coffee ice cream — my favorite!
We all enjoyed our ice cream on the rocking chairs on their porch. Beautiful view and great company 🙂

When I got home, I was feeling inspired and decided to whip up a batch of exactly what I was craving — my Sweet Potato Lentil Chili!
Yummm! Just as delicious as I remembered 🙂 I also added in some bok choy and a couple random black beans from the fridge.
