Hello, hello!
I’m back in Chapel Hill and getting organized after my whirlwind few weeks of vacation (stay tuned for a fun recap of it all tomorrow)! I love traveling, but I love my real life, too. 🙂 It’s nice to be home again, especially since I got to see this guy!
Matt and I went for a nice bike ride yesterday after I arrived home from Philadelphia. It was fun — our bikes hadn’t been out to play since our triathlon!
Matt was excited to try out his fun new Pittsburgh bike jersey that I got him for his birthday. Cool, huh? 🙂
Matt’s from Pittsburgh, and we saw this jersey when we were there in Easter and went biking with his parents. I made a mental note to secretly buy it online once we got home 🙂 Hehe.
We biked for about an hour, covering 9-ish miles.
By the time we got back, it was dinner time! We decided to bust out this fun sample I got at the Healthy Living Summit on Saturday.
Quaker was the main sponsor at HLS this weekend, and had a booth set up to give away some samples of new products. Apparently they own Near East — I had no idea! I snagged these new quinoa blends and we tried out the roasted red pepper & basil flavor last night.
Matt cooked up some chicken and veggies for us (just sautéed them in some olive oil, garlic, and various spices) and served the mixture atop the quinoa/brown rice. Deeelish!
We enjoyed dinner out on our patio, watching heat lightning and listening to approaching thunder. Lots of storms around last night! Made for a cozy evening in 🙂

I’ve spent the morning getting caught up on blog stuff (check out my updated travel page!) and now it’s time to hit the gym and get organized for school — year #2 of grad school starts tomorrow and I’m most definitely not ready yet. Yikes! I have fun plans to meet up with the grad school girls tonight — can’t wait to see them again 🙂
