With two tests this week, convenience is the name of the game! Enter these delicious, nutritious, and super quick and easy Peanut Cinnamon Date Balls.
Just like a Larabar, but cheaper 🙂
I was craving some sort of nut/fruit bar the other day but didn’t have any, so I decided to bust out my new food processor and make some of my own!
Thank goodness I don’t have to cover my ears anymore. At least not as much 😉
Peanut Cinnamon Date Balls
These Peanut Cinnamon Date Balls make a delicious, nutritious, and super quick and easy snack. They're portable, and ready in mere minutes.
Ingredients:
- 3/4 C pitted dried dates
- 1/2 C peanuts
- 1 Tbsp. oats
- 1/4 tsp. cinnamon
- 1 tsp. water (to help them stick)
Instructions:
Just toss it all into a food processor until ground/mixed, then form it into balls. Super easy!
Enjoy! And no, I don’t know the nutritional stats. But if any of you want to calculate them for me, please let me know and I’ll add them in 🙂

I’m off to take both of my tests, gah! I spent the morning on the elliptical studying again so I think I should be good to go.
I’ll be back with a fun post tomorrow about my afternoon today! After our tests, my Food Service Management group will be sticking around the kitchen at the UNC hospitals to make our Mexican Black Bean Burgers. I think some of their staff will be taste testing them with the possibility of actually selling them at their retail stores — cool!
