Hey friends! Thank you for your enthusiasm over yesterday’s announcement that my intuitive and mindful eating group program is now available for sign ups – Alex, Rachael, and I are excited to see some of you have already signed up to join us! The three of us are actually having an in-person meeting today in Virginia to record our audio files and finish up some of the last minute logistics. Should be fun to see them in person!
In other news – happy Cinco de Mayo! Matt and I celebrated earlier this week with some Blue Apron fish tacos. These were delicious – loved the crunchy radish and cabbage toppings! Ignore the paper plate – literally all of our dishes were in the dishwasher… just keepin’ it real over here. 😉

Not Mexican food related, but getting back to some of the other food highlights this week, I loved this seared chicken, purple potato, apple, and kale dish, again from Blue Apron. We had this on Sunday night – Matt had it waiting when I got home from the airport!

As for last night, we threw together a fast and easy ravioli dish – we had some organic cheese and basil ravioli in the freezer that became the base, and Matt made a veggie-packed tomato sauce to put on top with lots of spinach, mushrooms, and green peppers. He put a little bacon in there, too, for good measure. 😉
The other dinner highlight this week was a fun girl’s night out on Monday with Gretchen! I hadn’t seen her since her blizzard wedding (!) – way too long! We hit up Layla Bistro, a casual Mediterranean tapas place in Arlington/Falls Church (right on the border). We ordered a TON of little plates to share, which I always love doing, and I got my own order of the arugula salad to get in some veggie volume, too. 🙂
Everything was delicious – we’ll definitely be back! Great to catch up with Gretchen, too. Let’s not wait so long this time before meeting up again, k Gretchen? 🙂
I’m a little sweaty/red in the photo because I went straight to the restaurant from yoga! Since we were meeting for dinner right by Falls Church, I thought it was a good opportunity to hit up one of my favorite yoga studios, Blue Nectar Yoga, via ClassPass (<—affiliate link for $20 off your first month). I’m not over in Falls Church that often so it made sense to take advantage! 🙂
I went to their 6 p.m. vinyasa flow class, which was an hour of flowing followed by 15 minutes of meditation/shavasana. I LOVED the meditation end – all yoga classes should do that! It’s funny to me that I used to not be able to sit still for 30 seconds in shavasana and now it’s my favorite part of class. 🙂 (See also: Why I Love Yoga.) There was a CRAZY thunderstorm on Monday night here in the DC area and it was going on right when we were in shavasana – it was magical.
On Tuesday morning, I was back at the track for a rainy speed workout! We did mile repeats at threshold pace and I did 3 of them. My legs weren’t super energized given the half marathon I ran on Sunday, but I felt pretty good out there and it was fun to see my buddies.
I’ve been making good use of my ClassPass membership this week – after Monday’s yoga class felt so good I decided to hit up Epic Yoga during lunchtime yesterday while working downtown, and then this morning I used ClassPass to hit up another fave, Urban Athletic Club in Georgetown, with my girls Kathleen and Chelsea.
We hit up the 6 a.m. class (vs. the 7 a.m.) because we all had really busy days today and needed to be done early, and it was actually kind of nice because there was only one other person there besides us! The 7 a.m. is usually packed so this felt like a private workout. 😉 As always, those ladies (and the ClassPass no show fee) were the only thing that got me out of bed and sweating by 6 a.m. Thanks for the motivation, guys!
