Before I get into my weekend recap (which is actually mostly just a Sunday recap, because we actually did some fun stuff yesterday), I wanted to share some St. Patrick’s Day recipe inspiration!

We had absolutely gorgeous weather this weekend, especially yesterday, which was a big treat. We took advantage with a hike! It was nice to get out there without snow/mud everywhere like last time we attempted to hike…

It was just about the perfect hiking day – 65 and sunny. Not too hot, not too cold, not humid, and no mosquitos yet, either!
It’s always fun to take Riese hiking – she usually really enjoys it, too, at least when the weather is good like it was yesterday.
Our friend Shane met us for the hike too and we all had fun tromping around, throwing rocks into and exploring the water, etc.
One of the nice things about Riese not napping anymore is that now we can do early afternoon outings like this! I know, I know, enjoy it while it lasts before baby #2 arrives, right? 🙂
I was feeling pretty good physically yesterday which was nice, too, because a week ago my SI joint pain had gotten so bad there were a couple days where it was quite painful to walk.
I got in to see a prenatal physical therapist on Friday and that helped immensely, and I’ve also been cooling it on any fitness except walking for now. My PT said I should be able to get back to strength training and Peloton-ing and such soon but to give it a break for now while we get the situation under control. Works for me!
Before our fun hike, we had a yummy brunch with my parents!
I had a goat cheese frittata recipe I wanted to test out for the blog and our meal together was the perfect time to give it a shot. (My parents are now fully vaccinated so we are hanging out again, yay!!)
The frittata came out awesome and I can’t wait to share the recipe for it with you soon. Stay tuned!

It was so nice out post-hike and we were hungry so we decided to grab some outdoor snacks and drinks at True Food Kitchen in Ballston. It was shady and a bit windy so a little chilly, but still fun to be out and about.
Their edamame guacamole is super yummy and reminds me of my Lemon Avocado Hummus recipe! Riese was really into the edamame.
I tried their butternut squash soup, too, because I was cold and it sounded good, but it was just okay – a little too sweet for my taste.
I think my Instant Pot Butternut Squash Soup is better, just sayin’. 🙂
Dinner was simple because of our late snack and because we were trying to get Riese to bed early because of the daylight savings time change (changing the clocks is extra annoying with toddlers in the mix) – a wrap stuffed with some rotisserie chicken, black beans, cheese, hot sauce, broccoli slaw for crunch, and arugula.
I will leave you with a picture of Riese and Freyja, who she is obsessed with… like Zara (our cat), Freyja doesn’t exactly fully reciprocate the smothering toddler love, but she is fairly tolerant of it. 🙂
