And now – for some Friday faves/things I’m loving lately.
1) Riced cauliflower! Have you guys tried this before? It’s basically shredded up cauliflower that looks like rice. I had it once on a salad at lunchtime and wasn’t a fan because I just wanted real rice (it was part of a pre-made salad I ordered out, or else I would have just had real rice!), but we tried it in an Asian stir fry dish this week just for fun to mix it up and it was SO GOOD!
I still love regular rice but it was nice to try something new, and it really absorbed the flavor of the dish well. Matt and I both loved it!
2) Speaking of Matt – how hilarious is my dinner companion on Monday night (Halloween)? 🙂
We were fielding Trick or Treaters while making/eating dinner so we were both dressed up – Matt was a ghoul/dark scary creature of sorts. It was hilarious eating dinner with him dressed like that! (I was lazy and “dressed up” as a marathon runner and wore my Marine Corps Marathon gear and medal!) Best quote from the night, from Matt: “The Dark Lord does not do dishes.” Lol!
3) Sunrises. This time of year has the best sunrises – how gorgeous is this one viewed from the track on Thursday?
My legs were feeling fresh by Thursday so I decided to go to my track group mostly just to see my track buddies and tell them all about the race. 🙂 I kept it reeaaaaally nice and easy on pace and jogged about 3 miles. Felt good to shake things out! My hamstring felt a little tight at the end but my legs feel way fresher this week than they did last week after the Mount St. Helens hike… #taperfail
I mostly stuck to rest days and yoga this week, though, which felt amazing! I also got a massage on Wednesday which was perfection.
4) I’m spending the next 6 days in San Diego!
I am on the plane right now; Matt and I are flying out with some family for my cousin’s wedding tomorrow. Everyone else is leaving Sunday or Monday but I’m sticking around for part work and part fun – on Monday and Tuesday I’m meeting up with my blogger buddy, personal trainer Gina who lives in San Diego, to film the workout videos for our annual Winter Shape Up which launches on January 23! I’m really excited because while we’ve been co-hosting the blog challenge for years now we’ve never filmed the videos together – should be a blast. I haven’t been doing much boot camping lately so I’m sure it will be a serious workout, too – her workouts are legit! (See also this one she just posted this week: TRX Kettlebell Circuit Workout)
After the workout video fun, I’ll be spending Wednesday and Thursday in San Diego hanging out with my grad school BFF Lauren. Can’t wait to see her!
This is actually my last trip of the year (well, not including Christmas in Pittsburgh) – I absolutely love travel but after such a busy summer and fall it will be fun to be in town for a couple months! Looking forward to some low key weekends once I’m back. 🙂
