Hey friends! I’m glad many of you liked the look of my Sheet Pan Asian Salmon with Veggies – give it a shot this weekend and let me know how it goes! So easy, fast, and yummy!
It has been a reeeeeally busy week over here – I’m happy it’s Friday! No workout today – I was in need of a day off and a long night’s rest after burning the candle at both ends a bit this week. I literally went to bed at 8:45 last night and fell asleep immediately – it was awesome.
It’s no wonder I was tired because I had a really awesome and speedy track workout yesterday morning!
We had a shorter and faster day on the agenda. After warming up, we started with a 1600 (1 mile) at threshold pace, then (after a couple minutes rest) an 800 at threshold pace. Then we moved into 400’s (one lap) – hard and fast with a short 1-2 minute recovery in between. We did 4 of them and I was proud I did a really good job with pacing – it’s hard not to start too fast and tank (both during the lap, but also over the series of the 4 laps too). I got 1 second faster for each of them and then 5 seconds faster for the last one. Yay! The watch above just includes the workout – not my warm up jog and cool down jog.
Thanks to the warm weather I was in the mood for a smoothie when I got home from the track so I whipped up a variation on my Banana Spinach Smoothie (<—recipe).
I followed the recipe (except I used almond milk and added Kura vanilla protein powder), and also added half an avocado for some healthy fat. Avocado in smoothies is so good – try it! Makes it really creamy and you can’t taste it.
I’d forgotten how good smoothies are – hadn’t had one in a little while! If you love smoothies, here are a few of my other favorites to try:
- Chocolate Cherry Espresso Smoothie
- Lemon Berry Ginger Protein Smoothie
- Healthy Shamrock Shake (since it’s almost March!)
As for dinner last night, Matt whipped up a quick meal for me and his mom, who is in town for the second half of a two part DC-based workshop and staying with us for the weekend. On the menu: salads + a simple pasta with marinara sauce! The sauce had green pepper, and onion and some ground turkey in it. And the pasta was black bean pasta, which was a fun way to mix it up!
And now it’s time to get back to my to do list! Have a fabulous day and a great weekend, my friends! Also – I can’t believe we only have a few more days left of this year’s Winter Shape Up. Thank you so much to all of you who participated – and don’t forget you have a few more days to comment on the week 4 meal plan and week 4 workout page to enter to win prizes!
One last HUGE thank you to the sponsors who made it possible to offer this challenge to you guys for free. Please show them some love! 🙂
