Hello, my friends! All this cold weather has me craving soup. Anyone else? Last night, I decided to whip up something warm and tasty.
I was originally planning to make my Sweet Potato Lentil Chili, but realized I didn’t have enough sweet potatoes or lentils on hand and decided to get creative. So this is essentially an “Everything in the Fridge/Pantry that Looked Appealing” Soup. 😉 I encourage you guys to try something like this – it’s fun and easy! It’s kind of like a marriage between the Sweet Potato Lentil Chili and my Veggie-tastic Minestrone Soup, which is another old favorite recipe here on the blog.
Into a pot, I threw a container of chicken broth (veggie broth would work fine too), a can of diced tomatoes, a little tomato sauce, about a cup of water, and then all sorts of random stuff: some lentils, cubed sweet potatoes, a can of kidney beans, a handful of baby spinach, chopped carrots and celery, a small chopped zucchini, and a little quinoa pasta just for chew. If you haven’t tried quinoa pasta yet, give it a shot! Super yummy and gluten free, too, if you’re looking for a good gluten free pasta. You guys know I’m not gluten free – just like mixing it up!
I threw in the harder ingredients first (lentils, sweet potatoes, carrots) and let them simmer for awhile before tossing in the rest.
It didn’t take long and soon I had a delicious soup, ready to eat! I added some cracked black pepper and truffle salt (SO GOOD) to the mix, too. Yum, yum.
In other news, our Christmas tree is up! We bought a little one from Target last weekend, plus some fun ornaments. We didn’t have a tree last year since we spent most of December in Costa Rica for our honeymoon, so I was determined to make our place festive this year!
We put some stockings up, too! The little one is for Zara. 🙂 I know, super nerdy. It’s fine.
Speaking of Zara, she’s very curious about the tree, but has decided to leave it alone for now. 😉
And now, it’s back to work for me! I hope you’re all having a nice day so far. I started mine early with some Ezekiel cinnamon raisin toast with nut butter to fuel up before a morning swim (30 minutes alternating freestyle, breaststroke, and backstroke). When I got home, I enjoyed my favorite Flour Free Breakfast Pancake with some berries.
I’m now camped at a coffee shop getting some work done, just to mix it up. I packed up some of my leftover soup to enjoy for lunch while I’m here.
