Hello, my friends! I hope you all had a lovely Easter (or regular) weekend. First things first – for those of you who have a ton of leftover hard boiled Easter eggs on hand, try my Healthy Deviled Egg recipe! It’s an old favorite.
Matt and I spent Easter weekend down in Winston-Salem, NC, with Matt’s brother Chris and his wife Jess and Matt’s parents, who drove down from Pittsburgh. It was such a nice, relaxing time. Here are some of the highlights!
On Saturday, the weather was gorgeous – perfect temperature and Carolina blue sky at it’s best, so all of us decided to go out for a hike!
Chris and Jess’s adorable dog, Maggie, came for the adventure as well.

We did the Yadkin Islands Trail in Pilot Mountain State Park. It was a really pretty area and almost empty except for us and a few people riding horses, so that was nice, too!
We had fun walking and chatting and enjoying the sunshine and scenery. We forged some mighty streams:

After a couple hours, we found a picnic table and settled in for a late lunch!
We hit up Whole Foods before heading to the trail and we had quite the feast – meat, cheese, baguettes, fruit, nuts, veggies, olives, etc. Delicious!
After our hike, we drove over to the top of Pilot Mountain to check out the viewing area. The “kids”:
It was such a wonderful way to spend the day. We also went out to a fabulous dinner on Saturday night at a southern place in town called Milner’s. Highly recommended if you’re ever in the area!
On Sunday, we continued the feasting! Chris and Jess hosted a big Easter lunch for us as well as Jess’s family, who live nearby. We all pitched in to get the meal ready and everything came out great.

We all started with a delicious salad. Loved the herbed cheese!
The main event was roast beef, mashed potatoes, carrots, and asparagus. Everything was amazing. I went back for seconds on the meat and carrots!
For dessert, we had macaroons, homemade by Jess:
And apricot gelato, homemade by Chris using their ice cream machine! Yum.
Such a wonderful weekend with family. And now – back to the grind! Matt and I drove back to DC yesterday and arrived home late last night to fall into bed. Oh Monday, you always come too quickly.
