Deconstructed Quinoa Burrito

This deconstructed quinoa burrito is a lot like a refreshing taco salad. It's extra filling thanks to the quinoa and black beans!

Ingredients:
- Quinoa (cooked) (you can also use brown rice)
- Black beans (drained and rinsed)
- Green pepper, chopped
- Avocado, sliced
- Salsa
- Fresh cilantro
Instructions:
Just toss everything in a bowl (I used one serving of the quinoa and black beans and then piled on the other ingredients!) and enjoy — it’s like a Mexican party in your mouth 🙂
