Good morning from beautiful San Juan, Puerto Rico!
If you’re just tuning in, my boyfriend Matt and I are here on vacation — it’s my spring break from my masters program 🙂
We arrived yesterday around 2 p.m. and once we got settled, we headed straight to the beach 🙂
The weather was perfect. Don’t worry, we wore lots of sunscreen!
After the beach fun, we headed to the roof of our hotel to catch the sunset.
And then it was time for DINNER! We spent some time wandering around and exploring, and then found an authentic Puerto Rican place with a fun, chill atmosphere and outdoor seating. Perfect!
Right after I posted about coming to Puerto Rico, my friend Evelyn emailed saying I HAD to try mofongo, a local specialty.
Mofongo is a mashed mound of plantains or yucca, which is mixed together with garlic, broth, and either olive oil or butter. It’s usually stuffed with some sort of meat or seafood. Last night, I tried shrimp mofongo!
My mofongo came topped with a Creole —style red sauce. It was SO good!
Total win. Will definitely be having this again before we leave!
Matt ordered chicken with a fun garlic sauce, plus rice and beans. I love that rice and beans are everywhere here. Yum. One of my favorite foods 🙂
Matt and I are off to enjoy the day — it’s another beautiful one! We have plans to hit the beach, the pool, and do some exploring. We’re also going to go for an early evening run — last night on our walk to dinner literally EVERYONE we saw was a runner/jogger/walker! It was crazy, I’ve never seen so many people out exercising! Guess everyone works out after sunset here to beat the sunny heat 🙂
