I wanted add some extra healthy fats (and staying power) into the mix, so I created this tasty variation with avocado. The result is the perfect quick breakfast for busy weekdays (or anytime) that feels like an elevated restaurant meal.

Quick Fried Eggs with Feta Cheese
If you haven’t tried feta eggs yet, this is your sign to do it! I’m a huge fan of savory breakfasts (especially easy breakfast recipes with eggs) that are protein-packed and will keep you fueled throughout the day, and this one is no exception.
Just like one of my classic quick breakfast faves avocado toast, this recipe is so simple to make and super versatile.
Plus, it’s so tasty – the salty feta cheese pairs really well with the jammy egg and creamy avocado. The cheese gets crispy on the bottom as it heats, which adds to the variety of textures!

What You’ll Need
Here are the ingredients you need to make these easy feta fried eggs on toast:
- eggs (I like using large or extra large eggs. You can never have enough egg!)
- feta cheese (This is a salty, soft cheese made from sheep’s milk, or a mixture of sheep’s and goat’s milk. You can buy crumbled feta cheese, or buy a block of feta and crumble it yourself. Either way works!)
- avocado (To make sure your avocado is ripe, give it a slight squeeze. It should be somewhat firm, but with some give. If it’s too hard, it isn’t yet ripe enough, and if it’s too squishy, it’s overripe.)
- lemon juice (This gets mixed into the mashed avocado and brightens up the flavor of the dish).
- arugula (I love topping egg dishes with arugula. The peppery flavor is delicious! You can easily swap this out for microgreens or sautéed spinach, or leave it out if desired.)
- bread (Your favorite type of sliced bread for toast.)

How to Make Crispy Feta Fried Eggs
To make this 10-minute breakfast, start by mashing the avocado in a bowl with lemon juice.
Next, grease a skillet with cooking spray or oil and set to medium heat.
Once hot, sprinkle 1/4 cup of crumbled feta cheese in an open circle in the center of the pan (leaving the center empty), and let cook 1 minute.
Then, crack an egg into the center and season with salt and pepper. Place a lid over the skillet and let cook until the eggs are cooked to your preference. (The egg yolks can be runny if you want, but make sure the egg whites are opaque and cooked through. And the lid on top is key as otherwise the feta will burn before the eggs cook through!)
Remove from heat and repeat with the second egg and another 1/4 cup feta cheese.
While the eggs are cooking, toast bread and spread with avocado mixture. Add arugula and top with the cooked egg and feta.
Lastly, optionally top with crushed red pepper flakes or hot sauce for some spice and dig in!

You can easily make this recipe gluten free by using use gluten free bread for your toast! Or, leave the toast out and just add the avocado on top of the eggs.

10-Minute Crispy Feta Fried Eggs with Avocado
These deliciously crispy skillet feta eggs are served over avocado toast for a healthy 10-minute breakfast! They're super versatile, too.
Ingredients:
- 1 ripe avocado (pit removed)
- 2 teaspoons lemon juice
- 1/2 cup arugula
- 1/2 cup feta cheese
- 2 eggs
- salt & pepper to taste
- 2 slices of bread
- optional: red pepper flakes
Instructions:
- In a small bowl, mash the avocado with 2 teaspoons of lemon juice and set aside.
- Heat a small skillet (well greased with cooking spray or oil) over medium heat.
- For best results, cook the two eggs separately, one after the other. For each egg, sprinkle ¼ cup of the feta cheese in a circle leaving room for the egg in the middle. Cook feta over medium heat for 1 minute letting the pan preheat before adding the egg.
- Crack a large egg in the center of the feta circle and season with salt and pepper. Cover and cook until the egg is cooked to your preference and the feta cheese is golden brown. Once the first egg/feta mixture is ready, repeat again for the second egg/feta mixture.
- While the eggs are cooking, toast the bread, spread the avocado mash and sprinkle arugula over the toast. Top with the cooked egg and feta when the egg has finished cooking.
- Optional: Sprinkle with crushed red pepper flakes or add a drizzle of hot sauce if you like a little heat.
