Ingredients:
- Whole wheat pasta
- Garlic, finely chopped
- Veggies (chopped — we used zucchini and broccoli)
- Chicken breasts, cut into cubes
- Extra virgin olive oil
- Salt & pepper to taste
- Tomato pasta sauce
- Grated parmesan cheese
Just adjust the amount based on how many people you’re serving You can also use white beans instead of the chicken — this is what I do when I’m eating on my own!
Instructions:
Chop veggies (we used zucchini and broccoli), garlic, and raw chicken.
Put the pasta and broccoli in water to boil, then put the garlic, some olive oil, and the raw chicken in a skillet. Once the chicken is almost cooked, add in the zucchini and some salt and cracked pepper.
Once the pasta is ready, drain it, put it back into the big pot, and add the chicken and veggies on top of it. Mix it all together, and you are ready to eat!
We topped our pasta with some Prego tomato sauce and grated parmesan, but pesto would also be great.
