Good morning from chilly Chapel Hill! I guess the weather heard me raving about how awesome NC is in winter and decided to show me who’s boss. Fail. 🙂
Yesterday morning, Elle and I started our day with a chilly run. When we were in grad school, nearly every Thursday morning super early before class, the two of us met for a run at the community center, which was in between our apartments and featured some pretty wooded trails.
We decided that yesterday morning we should have a reunion run at our old spot. The run starts with a massive hill up into town, followed by a nice run through Chapel Hill, then down a big hill, and onto a pretty trail.
I love this bridge. 🙂
And done! We covered 4.31 miles in 37:39, chatting away per usual.
Splits:
- Mile 1: 9:10 <— hill of death
- Mile 2: 8:53
- Mile 3: 8:21 <— glorious downhill
- Mile 4: 8:40
- 0.31 nubbin pace: 8:21
Overall average pace: 8:44 minute/miles. Nice!
After our run, we headed to Weaver Street Market in Carrboro again to meet up with Maria for more studying. If you’re just checking in, we’re currently studying for the scary national standardized Registered Dietitian (RD) exam. The final hurdle in our journeys!
Lunch was another random smorgasbord of salad bar items – mmmm, burritos.
Around 3:30, with another 5 hours of studying under our belts, we said farewell to Maria, and Elle and I picked up some groceries before heading back to her place. Our friend Jill from grad school came over for dinner!
On the menu: my Turkey, Veggie & Barley Chili (click for recipe)! An old favorite.
Jill brought ingredients over for a side salad. Spinach, tomato, avocado, and goat cheese. Simple and delicious!
The table, ready to go:
YUM.
We all topped our chili with a little grated pepper jack cheese, plus some plain Greek yogurt for creaminess. And hot sauce, of course!
After dinner, our friend Lauren came over (she had a work dinner thing to go to), and then we had a fun Google+ video chat hangout with our friends Libby and Kort who are, sadly, far away!
We discovered you can put fun props on each other via the Google+ program – hilarious.
Lol. Love these girls.
Such a fun night. And now – back to the books, yet again! We’re studying over at Maria’s again today – time to get a move on!
Happy Friday, everyone!

A couple announcements before I go:
- My fANNEtastic food Facebook fan page just reached 3,000 likes! How exciting. Thank you for your support! I’ve love if you connected with me on Twitter, Pinterest, and Instagram, too! 🙂
- Blog reader Jessica emailed me about a nutrition program called “Kiddos in the Kitchen” she’s running for children ages 3-5 in an effort to teach them about the benefits of healthy eating. She’s acting on a completely volunteer basis and is raising money to cover the costs of healthy food for the classes, plus healthy snacks and a kid’s cookbook for them to take home. Obviously this is a cause I 100% support and believe in, and if you do, too, here’s her donation page if you’d like to help out! Good luck, Jessica, and keep up the great work!
