So… the ARMY TEN MILER is tomorrow morning!!! I’ve been training for this all summer and I can’t believe it’s finally here. My brother flew in this morning to run the race as well, and we just finished a fantastic pasta dinner with my friend and training partner Ashley. Ashley and I are planning on running the whole way together — we’ve had so much fun training together, it makes the time fly by! Here we are, full, happy, and ready to rock:
So, back to dinner! Obviously we had to have pasta, and since a boy (my brother) was involved, we also had to have something with meat. 🙂 Enter easy peasey chicken veggie pasta!
Ingredients:
- Whole wheat pasta
- Garlic, finely chopped
- Veggies (chopped – we used zucchini and broccoli)
- Chicken breasts, cut into cubes
- Extra virgin olive oil
- Salt & pepper to taste
- Tomato pasta sauce
- Grated parmesan cheese
Just adjust the amount based on how many people you’re serving 🙂 You can also use white beans instead of the chicken — this is what I do when I’m eating on my own!
I started by chopping some zucchini, broccoli, and garlic while my brother cut up the chicken. Um… yeah I didn’t take a picture of the raw chicken, sorry. 🙂 Gross!
We put the pasta and broccoli in water to boil, then put the garlic, some olive oil, and the raw chicken in a skillet. Once the chicken was almost cooked, we added in the zucchini and some salt and cracked pepper.
Here’s my brother in action with the chicken, looking really awkward that I’m taking a picture of him. Please also note that my finger wanted to make a cameo in the top right hand corner.
Once the pasta is ready, drain it, put it back into the big pot, and add the chicken and veggies on top of it. Mix it all together, and you are ready to eat!
We topped our pasta with some Prego sauce and grated parmesan. The perfect meal for the night before a big race! 🙂
Wish us luck tomorrow morning!!! As I mentioned in my last post, my right knee has been acting up, so I’m hoping it will be okay for the big day. We’re shooting to finish in just under an hour and a half, and I really hope my knee doesn’t hold me back!
