Blue Apron is a great way to create delicious, chef-designed recipes at home without having to deal with meal planning and grocery shopping – they deliver all the ingredients in the portions necessary right to your door! All you have to do is follow the instructions. 🙂
We use a little magnet to pin the instructions to our microwave on top of our oven:
Matt and I subscribe to the 2 person plan (3 meals – 2 servings each – per week), but they also offer a family plan, and you can cancel or skip weeks at any time, which is always helpful for travel. All the ingredients are delivered in a refrigerated box so everything stays fresh even if you’re not home – and Blue Apron offers a recycling program for their packaging, too – more info here. I also love that they are continually working on sustainability and choosing high quality ingredients – more info on their mission page.
Last week, the first of our Blue Apron adventures was Alsatian-Spiced Chicken with Smashed Potatoes and Glazed Red Cabbage, pictured at the start of the post! I LOVE cabbage so this one was a big win with me. Great spices on the chicken, too – we both enjoyed it!
Fun fact: apparently when you boil purple cabbage in water the water turns a beautiful purple color – I wonder if you could use it as a natural Easter egg dye?! Food for thought. 😉
Next up was a Catfish with Collard Greens and Lentils – yum. I always love the addition of lentils in recipes, and catfish is mild enough that Matt enjoyed this, too!

We enjoyed last week’s final Blue Apron meal as a cozy date night in on Friday! We saved Matt’s favorite for last: steak. 😉 I went to a 6 p.m. yoga class and came back after to find Matt home from work and nearly finished making it – husband of the year, right there! And one of the big reasons I love Blue Apron – neither of us is “keeper” of the recipe/meal plan so whoever gets home first can easily choose one of the recipe print outs, grab the relevant ingredients in the fridge, and start cooking, no confusion necessary.
So delicious! I especially enjoyed the garlicky kale with this recipe, and there was tons of it which made me happy! I’m definitely going to recreate that part of the recipe again soon. (The recipe is here: Steaks au Poivre with Crispy Fingerling Potatoes and Sauteed Kale.)
