Hello and happy Monday!
And by happy Monday, I really mean can we go back to the weekend instead? Mine was particularly fun because on Saturday following my 7 mile training run I hosted a brunch party at my place for my grad school girls! (We missed you, Elder & Kort!)
The occasion? Attune Foods sent me an awesome breakfast party kit! It included 6 go bowls (pictured below) to give out as party favors and a bunch of boxes of cereal to use to create some fun baked goods, too.
I LOVE those go bowls — perfect size and great for packed yogurt and fruit. Love the screw top, too! Plus, they are BPA free and made out of recycled yogurt cups.
I decided to do a potluck brunch since the girls and I usually like doing potlucks — more fun for guests to participate, too! My responsibility? Baked goods, of course. 🙂
I had fun perusing the recipe section on the Attune Foods website to decide what to make — they have some awesome stuff up there! I decided to make two different baked goods — one using one of their recipes and one a creation of my own.
Here’s the recipe I used from their site: Uncle Sam Vegan Walnut Pumpkin Bread.
I would never have thought to use cereal in a bread recipe — loved it! The only change I made was using regular milk instead of dairy free.
And for my own creation, I made Peanut Butter & Jelly Muffins!
These were amazing — so flavorful! I used Erewhon Rice Twice cereal in it and loved it — fun texture AND the batter crackled and popped. 😉

The girls brought all sorts of delicious food for us to enjoy, too. Elle made a yummy egg and veggie casserole topped with cheese and bacon!
Anything topped with cheese and bacon is a win, let’s be honest. Elle was smart and baked half of it at home so it wasn’t runny, then added the cheese and bacon on the top and baked it the rest of the way at my place. Genius!
Libby brought a French press and made us all lattes! They were even better than Starbucks. 🙂
She also brought some roasted Brussels sprouts for a little veggie action — SO good.
Jill and her boyfriend Danny made apple and peach cobblers:

Stephanie brought the champagne for mimosas, obviously:

And Matt was in charge of making the bacon. 🙂
He actually used our panini press to cook it and it worked out perfectly since most of the fat was able to drip off!
It was quite the feast.
And of course I sent the girls home with their very own Attune go bowls! Being in grad school = packing a lot of breakfasts and lunches = they were clearly pumped.
