Good afternoon!
I’m back in Chapel Hill and working to get caught up on all the class-related stuff I missed this week while I was in DC with my family. Lots of recorded lectures to listen to and an assignment due tomorrow! After class this morning, I came home to make an early lunch.
Earlier this week, I whipped up a Middle Eastern-inspired barley salad with white beans, raisins, pine nuts, green pepper, and various spices, so I had the last serving of that today. It’s delicious — recipe coming next week!
It’s especially yummy topped with plain Greek yogurt 🙂
On the side, I had a massaged kale salad. I LOVE massaged kale salads — you literally just drizzle on some olive oil, lemon juice, salt, and pepper, and massage it into the leaves by hand. Takes out the bitterness!
I threw some mushrooms and avocado on top, too.
To drink, I had my favorite enormous plastic sorority cup, which I now fill with water instead of beer. Oh, how the mighty have fallen 😉
I pretty much take this cup all around the house with me, at all times. I <3 water.
Dessert was some refreshing sliced grapefruit.
Time to get down to work with all this catching up I have to do! And tonight I’m going to a fun blog and yoga-related event in Raleigh — stay tuned to see what it is 🙂

Do you carry water around with you, too? When I’m out and about, I always have a reusable water bottle in my purse or backpack, and when I’m at home, various glasses of water follow me around the house 🙂 It’s become habit! Matt always makes fun of me because I’m constantly sipping water. He’ll take one enormous glass every few hours and pound it; I’m the opposite — sip, sip, sip… just a little at a time 🙂 Writing this post, I’ve probably taken like 20 sips of water, lol.
