What is meal prep?
Meal prep is just a method of preparing multiple meals ahead of time, so you can save time later (like during a busy week when you might not have time to cook). Typically, the meal is prepped in a large enough batch so you can enjoy it over the next 3-5 days.
Not only does meal prepping save you time, but it also saves you money (and sanity!) and reduces food waste.
Certain types of food work better for meal prep than others, especially things that are meant for making ahead of time (like overnight oats).
Meal Prep Breakfast Recipes
If you know me, you know I’m a big fan of breakfast. I like it so much that I often have two breakfasts, in fact – one first thing and one mid-morning! Gotta stay on top of that hanger, am I right?!
Having pre-made breakfast options ready and waiting are key to making sure I don’t let myself get too hungry, especially with multiple little ones in the house (read: chaos).
I tend to like having a more sweet breakfast first thing, like oatmeal or chia pudding with fruit, and a more hearty, savory breakfast mid-morning, like a frittata or something else with eggs.
In today’s post, I’ve rounded up some of my easy breakfast meal prep friendly faves.
Simply prep these tasty breakfasts on a Sunday (or whichever day you like), and then grab and go throughout the week. Take that, hectic mornings!
Make Ahead Oatmeal & Chia Pudding
Let’s start with oatmeal.
Sometimes oatmeal can get a bad rap, but it’s actually so yummy if you make it right! (I talk more about this in my post: How To Make Oatmeal Taste Better (and More Filling).)
I also included a chia pudding recipe in here too, if you want to switch things up or try something new.
Almond Milk Overnight Oats with Berries
This dairy-free make ahead oatmeal uses almond milk for a creamy texture and slightly nutty flavor. The combo of berries (like strawberries and blueberries) with sliced almonds is delish!
Healthy Banana Baked Oatmeal
Baking oats is one of my favorite ways to prepare oatmeal in bulk!
Baked oatmeal has a crispier texture than typical oatmeal, and it’s perfect for meal prep. Just cut into slices and reheat in the microwave when you’re ready to enjoy, then toss on any additional toppings, like a melty nut butter or whole or chopped nuts for some crunch!
Carrot Cake Overnight Oats
If you love carrot cake like I do, these carrot cake oats are a must-try! To prep ahead, just combine the ingredients in a jar, shake, and let sit in the refrigerator overnight.
These are extra creamy (thanks to the coconut milk), and studded with deliciousness like shredded coconut, walnuts, and crushed pineapple. And, they’re gluten free (as long as you use gluten-free certified oats)!
Mango Chia Pudding
This chia pudding is easy to make and so satisfying! It’s made with coconut milk, so it’s dairy free and has a delicious light coconut flavor.
You can use fresh or thawed frozen mango – either way, it adds a sweet and tropical flair!
Chocolate Peanut Butter Overnight Oats with Banana
Who doesn’t love this classic flavor combo?
Peanut butter and chocolate come together (along with bananas and chopped nuts) for a crave-worthy breakfast you can prep in a jar.
Coconut Banana Chia Pudding
Coconut milk makes this banana chia pudding extra creamy and oh so tasty (plus, dairy free!).
Add any toppings you like – such as shredded/flaked coconuts and berries. Plus, it only requires about 5 minutes of active prep time!
Cherry Chocolate Overnight Oats
These cherry chocolate overnight oats are like dessert in a jar – but they’re nourishing enough for breakfast!
Chopped or slivered almonds add a lightly nutty flavor that’s totally delicious.
Mango Coconut Overnight Oats
If you’re craving something tropical, give this recipe a try! It’s got mango, coconut, kiwi, and banana.
You can practically feel the island breeze as you dig in. 😉
Meal Prep Recipes with Eggs
Eggs are a great way to keep you full and energized in the morning.
They’re packed with protein and great for making ahead, and they are my favorite for a mid-morning second breakfast when I need something really filling to tide me over until lunch!
Here are some of my favorite breakfast meal prep ideas with eggs.
Meal Prep Breakfast Burritos (Healthy & Freezable)
Breakfast burritos are my absolute favorite – I love having these breakfast burritos on hand in the freezer so I can quickly reheat and eat! Some of my favorites are these sweet potato breakfast burritos and these sausage potato egg burritos.
Just fill tortillas with your favorite roasted veggies and cheese, toss in some scrambled eggs, then wrap up the tortillas and save for later. (The trick is to wrap them in a paper towel before freezing, for when you reheat them in the microwave.)
I’d suggest making a TON of these at once so you can eat on them for awhile, and I also sometimes make half of them with rotisserie chicken instead of eggs when I want to have some easy lunch or dinner options on hand, too!
Goat Cheese Frittata with Spinach
This veggie frittata seems fancy, but it’s actually quite simple to make.
Plus, once you make it, you can keep it in the fridge for at least 5 days. Just reheat yourself a slice and breakfast is served!
Veggie Egg Casserole with Smoked Salmon
I love egg casseroles for make-ahead breakfasts. They’re great for using up all those extra veggies in your veggie drawer, too!
This one features bell peppers, mushrooms, asparagus, zucchini, spinach, feta or goat cheese, and smoked salmon. It’s packed with protein and flavor.
Spinach Feta Breakfast Wraps
If you love the spinach feta wraps from Starbucks, you’ll love my copycat version even more! It uses the whole egg (instead of just egg whites) for more nutrition and flavor.
Plus, these egg wraps are easy to make at home, are freezer-friendly, and the recipe yields 8 servings – so they’re perfect for meal prep!
Butternut Squash, Prosciutto, and Goat Cheese Strata
This combination of butternut squash, prosciutto, and goat cheese makes for an absolutely delicious strata! Just make it ahead, cut into portions, then reheat and enjoy throughout the week.
Meal Prep Veggie Scrambled Egg Muffins
These portable scrambled egg muffins are the perfect breakfast meal prep idea! They’re easy to make, and you can toss in any ingredients you want, from veggies to meats to cheeses and herbs. Yum!
Make-Ahead Veggie Egg Sandwiches
Craving a breakfast sandwich but don’t want to spend all that time in the morning making it? These make-ahead breakfast sandwiches are the key.
You just make the egg filling ahead of time, then use your favorite bread (or English muffin, bagel, etc.) to assemble in the morning. Voila!
Sausage Egg Casserole
This sausage egg casserole is one of our favorite brunch recipes for gatherings, but you can also make it for your weekly meal prep!
It’s cheesy, filling, and savory, and it is just as delicious reheated a few days later as it is fresh out of the oven.
Hard Boiled Egg and Cheddar Muffins (Gluten Free)
These savory muffins have a surprise in the middle: a delicious hard-boiled egg! Cute, right? And fun for kids, too!
They’re packed with protein and yummy herbs, and they’re easy to make ahead and take on the go.
Meal Prep Breakfast Muffins
If you’re looking for something on the sweeter side, these easy meal prep muffins are the way to go!
They’re super portable, flavorful, and lightly sweetened (aka not sugar bombs like some muffins can be) for a breakfast you’ll love.
Banana Blueberry Oat Muffins
These power muffins are packed with nutrients (including a hidden veggie) and flavor! They’ll keep you satisfied for hours, thanks to plenty of protein from the almond butter and walnuts.
