Lemon Avocado Hummus
I first posted this avocado white bean hummus recipe back in 2010, before I understood the wonders of SEO (search engine optimization) and the importance of naming recipes with things that people are actually searching for/want to eat. So I named the recipe “spinach avocado cannellini bean hummus.” Dude. That’s a mouthful, huh? And not exactly appetizing! I’ve come a long way with this little blog. 😉
Combine a crummy name with not-so-great photos and it was time for a refresh. The recipe was awesome, but no one was finding it. So – here it is again, with some fresh photos and a more appealing name, so your guests won’t know there’s spinach in it. 🙂
Recipe Ingredients
If you love lemon, avocado, and hummus, you will love this recipe. It’s fast, easy, and delicious, and the protein from the beans and the healthy fat from the avocado will keep you full and satisfied.
To make it, you’ll need:
- white beans (I used cannellini beans)
- avocado
- spinach
- lemon
- garlic
- olive oil
How to Make White Bean Hummus with Avocado
Luckily, this dip is super quick and easy to make. You might find yourself wanting to make it over and over again (and you definitely should)!
Just toss all the ingredients into a food processor, and blend until smooth. Scoop out with a spoon and place into a serving bowl or tupperware container if saving for later.
Enjoy as a snack with veggies and/or crackers, eat by the spoonful, or spread on a sandwich! It’s also really good in a wrap with smoked salmon, broccoli slaw, and some additional greens.
Storage Tips
Because there’s avocado in this, it will likely start to brown after a day or so. Keep that in mind if preparing ahead of time! To help preserve it, place a piece of plastic wrap over the top of the dip so there’s no air above it.

5-Minute Avocado White Bean Hummus Dip with Lemon
This lemon avocado hummus recipe is the love child of guacamole and hummus. It makes a great healthy delicious appetizer, snack, and sandwich spread!
Ingredients:
- 1.5 cup (one can) cannellini beans, rinsed and drained
- 1 cup fresh baby spinach
- 1 Tablespoon olive oil
- Half a large ripe avocado
- Juice from 1 lemon
- 2 cloves garlic
- Salt & pepper to taste
Instructions:
- Toss all ingredients in a food processor and process until smooth.
- Serve chilled with crackers and veggies, or use as a sandwich spread!
