Considering I eat nearly the same thing day in and day out (I’m looking at you, Microwave Banana Oatmeal and Flour Free Pancake) for breakfast, I finally decided it was time to mix things up. Introducing: a vegan Quinoa Breakfast Bake recipe! It’s gluten free, too.
I created this recipe as part of my ongoing recipe development partnership with Almond Breeze almond milk. As you guys know, I love regular milk in lattes/coffee, but I like mixing it up when it comes to baking and smoothies!
This breakfast is especially awesome because you can make it over the weekend and enjoy it all week.
As usual, I made this recipe quick and easy. It does require a bit of baking time, but the hands on time is minimal.
Simply assemble your ingredients (no need to pre-cook the quinoa – it should be raw!)…
Throw them all into a bowl together and mix…
Then pour into a baking dish (mine is 10×10 and 1.5 inches deep) and pop it in the oven! It will be quite liquid-y, but don’t worry. The raw quinoa will suck up a lot of that moisture as it cooks!
The final step, after 40 minutes in the oven, is to throw some walnuts on top. Bake 10 more minutes and you’re all set!
Voila – breakfast is served. This would be great for a group, too! It’s versatile – you can enjoy it on its own, as a warm cereal with more almond milk poured over it, etc! Feel free to get creative. It’s pretty crumbly, though, so don’t expect to be able to pick it up with your hand and eat it as a bar. (For that, try my Cranberry Quinoa Peanut Butter Power Bars!)
So there you have it – a complete breakfast in one bite. Protein (quinoa) + healthy fat (walnuts and flaxseed) + fiber (apple) + sweetness and flavor without needing to add any additional sugar (sweetened vanilla almond milk). That said, if you use unsweetened almond milk, you’ll want to add some maple syrup or something to add a little sweetness.

Quinoa Breakfast Bake
This quinoa breakfast bake is toasty, nutty, and delicious. It's dairy-free, too!
Ingredients:
- 2 cups uncooked quinoa
- 2 cups sweetened vanilla Almond Breeze almond milk
- 1 extra large or 2 medium apples, diced
- 1/3 cup ground flaxseed
- 1 tablespoon apple pie spice
- 1 tablespoon coconut oil, melted
- Pinch of salt
- 1/2 cup walnuts
Instructions:
- Preheat oven to 375.
- In a large bowl, combine all ingredients except walnuts and mix.
- Pour into baking dish.
- Bake 40 minutes. Remove from oven, top with walnuts, and bake 10 more minutes.
- Serve warm, with an extra shake of cinnamon. Enjoy!
