Healthy Peanut Butter Oatmeal Cookies
These fabulous cookies are sweetened only with maple syrup, gluten free (with GF certified oats) and vegan. So peanut buttery, and sweet without being too sweet, if you know what I mean!
And the texture is cookie-like, not cakey like a lot of healthy cookies, despite the addition of healthy fat from ground flaxseed. In fact, there are a lot of fabulous textures here, with the oats, raisins, and creamy peanut butter.
All you really have to do to make these cookies is stir together some ingredients (no electric mixer required!), then drop the dough onto a cookie sheet and bake. Easy peasy!

Peanut Butter Oatmeal Cookie Ingredients
To make these oatmeal raisin cookies, you’ll need:
- old-fashioned oats (Gluten-free certified if needed. I wouldn’t recommend using quick oats or steel-cut oats, as they won’t have the same texture!)
- almond flour (This keeps the cookies gluten-free.)
- ground flaxseed (For a nutritional boost, and to help bind the cookies.)
- salt
- baking powder (For rise and structure.)
- cinnamon (This gives it a lovely, lightly-spiced flavor.)
- raisins (Or your favorite dried fruit, like dried cranberries. You can also use dark chocolate chips if you’re a chocolate lover!)
- pure maple syrup
- natural peanut butter (or other nut butter)
- vanilla extract
Tip: if using natural peanut/nut butter, make sure to stir it very well beforehand. Often, the oil will separate from the nut butter in the jar, and you want to make sure it’s well combined before using it.
Also, if you don’t happen to have maple syrup, honey works as another natural sweetener (if not vegan).

How to Make Vegan Oatmeal Raisin Cookies
These gluten free power cookies are super easy to throw together.
Start by preheating your oven to 350 degrees F. Next, simply mix all the dry ingredients (oats through raisins) in one bowl, and the wet (maple syrup through vanilla extract) in another. Stir/whisk each bowl until well-mixed. Then, combine!
When the dough is ready, place on a baking sheet in 12 even mounds and bake. I recommend using a greased baking sheet, or lining it with parchment paper or a silicon mat.
After 12 to 15 minutes, the cookies should be done (and you will have some serious tastiness on your hands!). Make sure they’re set in the center, then let them cool and enjoy!

These delicious vegan & gluten free peanut butter power cookies are healthy enough to eat for breakfast! Or, enjoy them as a satisfying, portable afternoon snack.
Ingredients:
- 1 cup old fashioned oats (GF certified if needed)
- 1/2 cup almond flour
- 1/2 cup ground flaxseed
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/3 cup raisins (or other dried fruit)
- 1/2 cup pure maple syrup
- 1/4 cup natural peanut butter (or other nut butter)
- 1 teaspoon vanilla extract
Instructions:
- Heat oven to 350 degrees F.
- In a large bowl, combine all dry ingredients (oats through raisins).
- In another bowl, whisk together wet ingredients (maple syrup through vanilla).
- Add the wet ingredients to the dry ingredients and stir to combine.
- Drop the dough into 12 even mounds on a parchment paper/silicon mat-lined or greased baking sheet.
