Earlier this week, I was in the mood to bake. It had been way too long since I made any sort of fun new granola bar, and I wanted something I could enjoy as an easy snack in the afternoon. A little while later, and a new creation was born: Spiced Cherry Pecan Granola Bars. Gluten-free and dairy-free friendly, too!
Here is my arsenal of ingredients, ready to go! I got creative with what I had on hand, eventually adding some coconut flour to the mix, too. These would also be great with fresh cherries instead of dried – just pit and chop the cherries!
I didn’t get any pictures of the process, but when I mixed everything together, it was like rice krispie cereal – snap, crackle, pop! – due to the rice cereal! It would be a fun one to make with kids. 🙂

Spiced Cherry Pecan Granola Bars
Delicious, lightly sweet gluten free granola bars with cherries and pecans! They've got plenty of flavor and crunch.
Ingredients:
Dry Ingredients
- 2 C crispy brown rice puffed cereal (I used Erewhon brand's gluten free option)
- 1 C rolled oats (gluten free certified if necessary)
- 1/3 C coconut flour
- 1/2 C ground flaxseed
- 1/3 C chopped pecans
- 1/3 C dried cherries (or fresh cherries, pitted and chopped)
- 1/2 C brown sugar
- 3 Tbsp. cinnamon
- 1 Tbsp. nutmeg
- 1/2 tsp. salt
- 1/2 tsp. baking powder
Wet Ingredients
- 1 & 1/3 C Almond Breeze unsweetened vanilla almondmilk
- 2 eggs
- 1 Tbsp. vanilla extract
Instructions:
- Preheat oven to 375.
- In two separate bowls, mix dry ingredients, then wet ingredients. Pour wet into dry, mixing until combined.
- Pour batter into a cooking-sprayed baking dish.
- Bake 20 minutes. Cut into bars and cool on cooling rack.
- Enjoy! These will keep for about a week or so in the fridge, or you can freeze them, individually wrapped, for later.
I’ve been enjoying these on their own as a snack, and for breakfast I crumble them on top of cottage cheese or plain yogurt with some berries to tide me over longer.
